Ingredients

¼cupbutter

1tbspgarlic,minced

¼tspred chili flakes

1cupwhite wine

4lbsclams,fresh, cleaned

salt and pepper,to taste

1tbsplemon juice

¼cupherbs,chopped, such as parsley, chives or basil

herb sprigs,for garnish, optional

lemon wedges,for garnish, optional

Preparation

Heat a large pot over medium heat.

Add the butter, then allow to melt.

Add the garlic and chili flakes, then cook for 30 seconds, stirring constantly.

Add the white wine and bring to a simmer. Do not boil.

Place the clams in the pot, then season with salt and pepper to taste.

Cover the pot, then simmer for 7 to 9 minutes or until the clams have opened. Discard any clams that are still shut.

Stir in the lemon juice and herbs.

Serve garnished with herb sprigs and lemon wedges, and enjoy!
