Ingredients

2tbspolive oil

1tbspunsalted butter

1onion,finely chopped

4garlic cloves,finely chopped

2lbsmussels,1kg, cleaned

1cupdry white wine

½cupheavy cream

¼cupbutter,unsalted, cut into pieces

¼cupparsley,fresh chopped

salt,to season

black pepper,cracked, to season

1tbsplemon juice,fresh squeezed

Preparation

Heat the olive oil and butter in a large pot over medium-high heat. Sauté the onion and garlic until softened for about 5 minutes.

Add the mussels, wine, cream, butter, and parsley. Season well with salt and pepper, to taste.

Mix well, cover the pot with a lid and cook until mussels are cooked through and opened, about 12 to 15 minutes.

Serve mussels along with the juices in the pan with crusty or garlic bread.
