Ingredients
7cupspotatoes,diced
1medium onion,diced
1large carrot,chopped
2cupsham,diced
2cupschicken,cooked & diced
2tspparsley
½tspthyme leaves
2tspdijon mustard
5cupschicken broth
1cupcream
2cupsmozzarella cheese,shredded
pepper,to taste
Preparation
In a large pot, combine diced potatoes, onion, carrot, chicken, ham, thyme, parsley, pepper, dijon and broth.
Bring to a boil and simmer for 20 minutes or until potatoes are soft.
Remove 2 to 3 cups of the potatoes or carrots and transfer to a bowl.
Mash and put back the mixture to the pot.
Add cream, stir and cook for an additional 5 minutes. Stir in shredded cheese until melted. Serve hot.
