Ingredients
5ozarugula
½cupfresh basil,chopped
1lbstrawberries,thinly sliced
¾cupred onion,finely chopped, about ½ small onion
4ozgoat cheese,crumbled, or feta, or 1 ripe avocado, diced
½cupsunflower seeds,roasted and salted
½cupradish,halved and thinly sliced
1jalapeño,medium, very thinly sliced
¼cupextra-virgin olive oil
1½tbspbalsamic vinegar
1tbspdijon mustard
½tbspmaple syrup,or honey
1garlic clove,pressed or minced
pinchfine sea salt,to taste
freshly ground black pepper,to taste
Preparation
On a large serving platter, layer in the following order: arugula, basil, strawberries, onion, goat cheese, sunflower seeds, radish, and jalapeno.
In a liquid measuring cup or small bowl, combine the olive oil, balsamic vinegar, mustard, maple syrup, garlic, salt and pepper, then whisk until fully blended.
Drizzle vinaigrette on top, toss to combine, then serve. Enjoy!
