Ingredients

1¼cupsugar,divided

¾cupbutter,softened

1egg

1tspvanilla

2¼cupsflour

1tspbaking soda

¼tspsalt

24-36mint meltaway candies

Preparation

Preheat oven to 375 degrees F.

Add 1 cup sugar, butter, egg and vanilla to a bowl and mix well. Beat until well combined.

In a separate bowl add the flour, baking soda, and salt. Add this to the creamed mixture and mix well.

Place remaining sugar into a bowl.

Shape dough into 1½-inch balls, roll in sugar and place onto an ungreased cookie sheet.

Bake for 7 to 9 minutes. Remove from oven and immediately add 1 mint candy to the center of each cookie. Let cool.

Serve and enjoy.
