Ingredients

2tbspcreamy peanut butter

2tspreduced-sodium soy sauce

1tsphoisin sauce

1tspsriracha

1/2tspgrated ginger

4tbspwarm water,to thin

24shrimp,jumbo, peeled and cooked

2English cucumbers,large

8ozcarrot,(1 thick)

1cupred cabbage,shredded

2tbspcilantro leaves

12basil leaves

12mint leaves

2tbsppeanuts,chopped

Preparation

Mix all the sauce ingredients in a small bowl and refrigerate until ready to use.

Spiralize the cucumbers and carrots, then cut into 6-inch lengths. Divide the cucumbers, carrots, and red cabbage between 4 bowls.

Top each with 6 shrimp, 2 tablespoons peanut dressing, fresh herbs, and chopped peanuts.
