Ingredients

2tbspolive oil

½onion,chopped

1clovegarlic,crushed

3cupswater

16ozdry black-eyed peas,(1 package)

3tbspcider vinegar

2tbspwhite sugar

1tspsalt

1dashred pepper flakes,or to taste

Preparation

Heat oil in a large saucepan over medium-high heat. Add onions; saute for 5 to 7 minutes until softened and translucent.

Stir in garlic; cook for about 2 minutes until fragrant.

Add water, black-eyed peas, vinegar, sugar, salt, and red pepper flakes.

Cook for 60 to 90 minutes until peas are tender.
