Ingredients

10 oz sweet potatoes, cooked

1½ cups egg whites, fresh, or All Whites

1 tbsp pumpkin pie spice

¼ cup oatmeal, dry

3 scoops Iso-100

½ cup low-carb baking mix

Preparation

Preheat the oven to 350 degrees F.

Mash prebaked sweet potato.

Blend all ingredients together into a batter.

Pour into a non-stick muffin pan greased with cooking spray.

Bake for 20 minutes.
