Ingredients

4 cup sweet potatoes, sliced and peeled

4 cup tart apples, thinly sliced unpeeled

2 tsp onion, minced

2 tsp salt

1/2 cup maple syrup

1/2 cup apple juice

1/4 cup butter, melted

1 lb pork sausage

1/3 cup dry bread crumbs

Preparation

Preheat oven to 350 degrees.

Grease 2-qt. casserole. Arrange alternate layers of apples and sweet potatoes in casserole.

Sprinkle each sweet potato layer with onion and salt. Thoroughly combine syrup, apple juice and butter in a small bowl, and pour mixture over casserole.

Cover and bake for 1 hour. Meanwhile, brown sausage on a skillet over medium heat, stirring with wooden spoon until crumbly. Drain sausage and mix with bread crumbs.

After the hour, uncover casserole and spread sausage mixture on top. Bake, uncovered an additional 20 minutes.
