Ingredients
1/2 stick butter, melted
6 eggs, beaten
1 dash salt
1 tsp baking powder
4 oz green chilies, diced; 1 can
1 cup cottage cheese
1 cup cheddar cheese, grated
1 cup Monterey Jack cheese, grated
Preparation
Heat oven to 350 degrees and melt the butter in an 8x8-inch baking pan.
In a large bowl, combine melted butter with the remaining ingredients.
Mix well and pour the mixture back into the baking pan.
Bake for 30-35 minutes or until the egg is cooked in the center and the casserole is light brown.
Cut into 1-inch squares and serve warm.
