Ingredients
3large tomatoes,ripe, cut into wedges
12ozchicken breast,from rotisserie chicken
5ozavocado,sliced
2tbspextra virgin olive oil
1lemon
½cupfresh small basil leaves
kosher salt
fresh black pepper
Preparation
Divide the tomatoes between 4 plates or bowls.
Shred the chicken breast into large pieces and arrange them over the tomatoes with the avocado.
Drizzle with olive oil, squeeze with lemon juice, and season with salt and fresh pepper, to taste.
Top with fresh basil, serve, and enjoy!
