Ingredients

1lbspaghetti

3tbspextra-virgin olive oil,divided, or more if needed

1onion,finely chopped

7ozpancetta bacon,diced

2cupspassata,(crushed tomatoes)

1tbspwater,or more as needed

½tspwhite sugar

2tbspparmesan cheese,grated

1pinchred pepper flakes,or to taste

salt and freshly ground black pepper,to taste

Preparation

Bring a large pot of lightly salted water to a boil.

Cook the spaghetti in boiling water, stirring occasionally for about 12 minutes, until tender yet firm to the bite.

Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat and cook the onion for about 5 minutesuntil golden brown.

Add the pancetta and cook, stirring occasionally for 2 to 3 minutes, until crisp.

Pour in the passata, water, and sugar. Cook for 10 to 15 minutes until the sauce has thickened.

Drain the spaghetti and toss with the sauce, remaining olive oil, parmesan cheese, and red pepper flakes.

Season with salt and pepper.
