Ingredients

3 eggs

1 can creamed corn

1 can corn kernels, drained

1 cup mushrooms, chopped

1 cup green onions, chopped

1 cup Greek yogurt

1/2 cup cornmeal

2 cup cheddar cheese, shredded

1 pinch salt

Preparation

Preheat your oven to 350°F and grease your baking dish of choice.

Whisk the eggs together in a large bowl.

Pour in the creamed corn, ½ of the corn kernels, ¾ of the mushrooms, ¾ of the green onions, greek yogurt, cornmeal, cheddar cheese, and salt.

Mix until everything is well combined.

Pour this mixture into the baking dish and top it with the remaining corn kernels, mushrooms, and green onions.

Bake it for 45-60 minutes, or until a knife inserted in the center comes out clean. Serve warm and enjoy!
