Ingredients
2 carrots, peeled
6 turnips, peeled and ends removed
1 apple, peeled and core removed
1 tbsp lemon juice
3 tbsp olive oil
1 tbsp onion, chopped
1 ½ tsp sugar
1 tbsp apple cider vinegar
1 tbsp parsley, chopped
1/4 tsp pepper
1/2 tsp salt
Preparation
Place the carrots, turnips, and apples in your food processor.
Using the shredding disk, shred until all parts are evenly shredded.
Place into a large mixing bowl. Add the lemon juice and toss well to coat.
In a small bowl, combine the oil, onion, sugar, vinegar, and parsley.
Mix well and pour over the turnip mixture.
Toss well to mix and combine all ingredients.
Season with the salt and pepper and toss once more.
Cover the bowl and place in the refrigerator for 1 hour before serving.
