Ingredients

2cupsKosher salt

1½cupsdark brown sugar

12cloves,whole

3bay leaves

1tbspwhole black peppercorns

2½tspdried rosemary

2½tspdried thyme

Preparation

Bring water to a boil in a large stockpot.

Stir salt and sugar into the water until dissolved, then bring water again to a boil.

Add cloves, bay leaves, peppercorns, rosemary, and thyme to the water, then reduce heat to medium-low.

Cook mixture at a simmer for about 20 minutes.

Refrigerate brine until completely cooled.
