Ingredients
1½cupswhole wheat pastry flour
⅓cupunsweetened cocoa powder
1tspbaking soda
½tspsalt
1cupraw sugar,or turbinado, scant
½cupcoconut oil,or quality vegetable oil, melted, scant
1cupcoffee,cold
1tspvanilla extract
½tspalmond extract
2tbspcider vinegar
1 ¼lbdark cherries
Preparation
Preheat the oven to 375 degrees F.
Pit the cherries.
Line the bottom of the cake pan with parchment paper.
Whisk together the flour, cocoa powder, baking soda, salt, and sugar directly into the cake pan.
In a measuring cup, measure and mix together the oil, cold coffee, almond extract, and vanilla extract.
Pour the liquid mixture into the baking pan and mix the batter with a fork or a small whisk until it is smooth.
Add the vinegar and stir quickly. Stir just until the vinegar is evenly distributed throughout the batter.
Mix in the cherries with minimal stirring.
Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
Set aside to cool.
Serve warm or chilled, and enjoy!
