Ingredients

1cupgreen lentils

¼tspsalt

2tbspolive oil

1medium yellow onion,diced small

1green pepper,diced small

2small carrots,diced

3garlic cloves,minced

1tbspmild chili powder

2tsppaprika

½cupketchup

1cuptomato sauce

2tbspapple cider vinegar

2tbspbrown sugar

½cupwater

salt and pepper,to taste

red onion,sliced

Preparation

Rinse the lentils well and add them to a pot along with 4 cups of water and salt.

Bring to a simmer, cover, and continue simmering for 20 to 25 minutes over low heat until lentils are tender but not mushy. Drain lentils and set aside.

Heat the olive oil in a large skillet over medium heat. Add the onion, green pepper, carrots, and garlic. Sprinkle with a pinch of salt and pepper.

Cook for 5 to 6 minutes until vegetables soften. Stir in the spices, ketchup, tomato sauce, vinegar, brown sugar, half a cup of water, and reserved lentils. Stir well.

Simmer the mixture for a few minutes to combine flavors. Taste and adjust seasonings.

Toast the buns and add thinly sliced red onions to the bottom half of the bun.

Top with the vegan sloppy joe filling, then add pickles.
