Ingredients
1cucumber,cut in half lengthwise
6tbsphummus
¼cupcarrots,shredded
¼cupsprouts
¼cuptomato
¼cupred onion
3ozhass avocado,(from ½ medium avocado), sliced
1fresh lemon wedge,squeezed
kosher salt and pepper,to taste
Preparation
Scoop the seeds out of a cucumber using a metal measuring spoon.
Fill each boat with 3 tablespoons of hummus.
Top with the remaining vegetables, and finish with salt, pepper, and lemon juice.
Serve, and enjoy!
