Ingredients
1lime juice
2tbspolive oil
2tspraw honey
⅛tspkosher salt
freshly ground black pepper,to taste
2cupswatermelon,cubed
2cupsjicama,peeled and cubed
1largecucumber,peeled, seeded and cubed
¼cupred onion,thinly sliced
2ozfeta cheese,cubed or crumbled
1tbspfresh mint leaves,chopped
Preparation
In a large bowl, whisk together lime juice, olive oil, honey, salt and pepper.
Add the watermelon, jicama, cucumber and red onion to the bowl and toss to coat. Add feta and mint and toss gently.
