Ingredients
3zucchini,stems removed
28oztomatoes,crushed
¼cupsun-dried tomatoes in oil,optional
1red bell pepper,stemmed and seeded
5garlic cloves,peeled
¼white onion,peeled
1tbspbasil,fresh packed
½tspdried oregano
½tspred pepper flakes,crushed, use more/less to taste
¼tspsalt
¼tspblack pepper,freshly-cracked
Preparation
Use a vegetable peeler to shave the zucchini into long ribbons. Set aside.
In a food processor, combine the remaining ingredients and pulse until blended. Season with additional salt and pepper if necessary.
Serve the zucchini topped with marinara sauce.
