Ingredients
4 cups zucchini, shredded and unpeeled
½ tsp salt
2 eggs
½ cup parmesan cheese, grated
4 oz cheddar cheese, shredded and divided
8 oz mozzarella cheese, shredded and divided
1 lb ground beef
½ cup onion, chopped
1 oz tomato sauce
¼ tsp dried oregano
¼ tsp dried basil
Preparation
Place zucchini in a strainer; sprinkle with salt. Let it drain for 15 minutes.
Squeeze out excess moisture.
Combine zucchini with eggs, parmesan cheese, and half of the cheddar and mozzarella cheeses.
Press into a greased baking dish.
Bake at 400 degrees F for 20 minutes.
Brown ground beef with onion.
Add tomato sauce.
Pour over baked zucchini.
Top with the rest of the cheeses.
Bake for 20 minutes more.
