Ingredients
1tbspolive oil
1½cupsonion,chopped
1cuppieces sweet bell pepper,(1 inch)
4cupspieces zucchini,(1 inch)
1½cupswater
1cantomato paste,(6 oz)
4clovesgarlic,crushed
½tsporegano,dried
salt and ground black pepper,to taste
Preparation
Heat olive oil in a skillet over medium-high heat. Saute onion and bell pepper for 5 to 10 minutes until softened.
Add zucchini, water, tomato paste, garlic, and oregano.
Cover skillet and simmer over medium-low heat for about 20 minutes, stirring frequently until zucchini is softened and transparent.
